Sweet Potato Soup

Hey G-free Teens!

         Last night I decided to play with some ingredients to make dinner. Recently I’ve been loving to make soups, and I wanted to share at least one with you guys. (There might be more on the way!) This soup is full of flavor and is gluten-free (obviously), dairy-free, corn-free, and AIP! I’m soon to be going on an AIP diet so I’ve been trying some of these recipes out too! I recommend eating this soup with some bacon, taco meat (on the side), or something with avocados, for excellent combined flavors! Sweet with savory is DELICIOUS!

For this soup you will need:

• 3 medium sized sweet potatoes

• 2-3 carrots

• Coconut milk (unsweetened if you’re AIP) to taste

• 1 onion

• 1 tsp. of cinnamon

• 1 quart of chicken stock

Optional:

• 1 tsp. of pumpkin spice (If your AIP I have a recipe of an AIP pumpkin spice)

• 3-4 pieces of bacon cut into hash

How to make this soup:

  1. Peel and cut the sweet potatoes, onion, and carrots into large 2″ chunks.
  2. In an instant-pot, crock pot, or slow cooker, add the cut ingredients, cinnamon, and chicken stock, and pumpkin spice if you would like it.
  3. Turn the settings on your desired appliance to high for 30 or so minutes. (Until the ingredients get fairly soft.)
  4. Next, take an immersion blender and break down all the ingredients until they are in liquid form.
  5. Finally, add your coconut milk and any other optional topings, stir, and enjoy!

See, this is a very simple dish with only a few steps! I enjoy making this when I have very little time to waste on making food, and my parents are busy with work.

Chicken + Dumplings

 

This chicken and dumplings recipe is one of my all time favorite gluten free cooked meals! It’s also loved by the rest of my very large family.

There is a good amount of vegetables and protein in the soup portion, and an amazing dough that should impress anyone you make it for.

Anything in the soup portion of this recipe is adjustable, and you can mix and match ingredients to find whatever suits you!

Chicken + Dumplings                  Serves: 5        Prep time: 30-40 minutes

  1.  Cut up the celery, carrots, onion, and chicken, then put them aside.
  2. Make the dough for your dumplings and keep that in a bowl.
  3. Place a 3 inch tall saucepan on low-medium heat, and add your vegetables and chicken. Then pour in your chicken stock, and stir for a minute or so.
  4. Using a spoon, scoop a spoonful of dough and place it in the saucepan. Repeat this step until all the dough is in evenly placed around the saucepan. ( You should still have your vegetables, chicken, and chicken stock in the saucepan.)
  5. Put a lid on your saucepan and let everything simmer on medium low heat for 12 minutes, flipping the dumplings over at halftime.
  6. Serve and enjoy!

How to prep dumpling dough:

1. Mix the gluten free flour, baking powder, and salt in a small-medium bowl, and mix the egg, vinegar, and  milk in a larger bowl.                                 2. Add the dry ingredients to the wet ingredients and using a baking spatula, mix until a doughy texture.

Ingredients:

Cut into small chunks-

  • One head of celery
  • Three carrots
  • 1/2 an onion
  • 2 cups of chicken
  • 2 cups of chicken stock
  • 1 tbsp. of chopped parsley

For Dumplings-

  • One cup of gluten free flour
  • 1 1/2 tsp. of baking powder
  • A dash of salt
  • 1 egg
  • 1 tsp. of apple cider vinegar
  • 1/3 cup of coconut milk or other type of milk
